• 1 large spaghetti squash
  • 1 tablespoon olive oil
  • Salt and pepper to taste


  • Preheat oven to 375 degrees
  • Using a “ring” of a damp side towel, rest the spaghetti squash on its side on the towel ring. This will steady the squash for safer cutting
  • Carefully cut the squash length-wise
  • Scoop out the seeds and esh put aside for later use
  • Sprinkle salt and pepper on the inside of squash
  • Rub olive oil on cut side, place cut side down on roasting pan
  • Place in oven at 375 degrees roast for 30 to 40 minutes
  • Remove from oven and flip over to cool
  • Using a fork scrape out squash following the grain of the squash to insure longer strand
  • Now you have spaghetti squash “spaghetti”
