Ingredients:
- 1 1/2 teaspoons Kosher salt
- 1 1/2 pounds thin green beans, trimmed
- 1 pint grape or cherry tomatoes
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons red wine vinegar
- 3/4 teaspoon black pepper
- 1 cup crumbled feta cheese
- 1/4 cup mint leaves
Instructions:
- Fill a large bowl with ice water
- Bring a salted pot of water to a boil
- Add green beans and cook for 3 minutes or until crisp tender
- Drain the green beans
- Immediately place beans in ice water
- Drain and pat dry with paper towel
- Add green beans to a mixing bowl with the tomatoes
- Whisk together olive oil, vinegar, salt and pepper
- Pour over green beans and tomatoes
- Toss to coat
- Cover and refrigerate at least an hour
- When serving, add the feta and mint
- Toss to coat
